
Chef Adam Diltz ’00 in the kitchen of Elwood. He was inspired, in part, by the Inn at Little Washington in Virginia, where the cooking technique is old-school French, but the food is "thoroughly Southern." He dreamed of opening a restaurant that did the same for Pennsylvania Dutch foods.
