But his true success is in the classroom where he’s sharing his craft with the next generation of culinary professionals.

A select group of students are invited to put their talents to the test at high-profile events like the Kentucky Derby where they’ll work alongside Chef Charles and learn from other world-renown food professionals.

Chef Charles and several Penn College students attended the 138th Philadelphia National Candy, Gift and Gourmet Show. In fact, Charles was asked to create coursework and teach the institute's Chocolate Confectionary track.

When asked to weigh in on what the future holds for desserts and pastries, he told the publication, “The key is knowing your customers, the products and services that are most important to them, and staying true to your niche.”
Chef Charles received one of the highest honors bestowed on pastry chefs: a spot among Dessert Professional Magazine’s Top 10 Pastry Chefs in America.
